Irish beef chateaubriand with a sachet of peppercorn sauce, salt, bay leaf and cracked black pepper
FRY AND OVEN
220°C - 30-65 mins - - Oven 220°C / Fan 200°C / Gas 7
NEEDS COOKING
Preheat oven.
Remove all packaging, including pad, but not the string and set aside sachet of sauce for later use.
Leave to rest at room temperature for 30 mins.
Oil and season surface of meat and sear all over in a hot frying pan.
Transfer to a roasting tin and place into the centre of the oven.
Cook to desired doneness: Rare 30 mins; Medium 40 mins; Well Done 65 mins
Remove from oven and loosely cover with foil and allow to rest for 20 mins.
Remove string once cooked.
Whilst the beef is resting, transfer the contents of the sachet into a small saucepan to heat up.
Carve and pour over sauce to serve.
Do not reheat.
