• Preheat oven and remove all packaging.
• Leave to rest at room temperature for 30 mins.
• Oil and season surface of meat and sear all over in a hot frying pan.
• Transfer to a roasting tin and place into the centre of the oven.
Rare: 30 mins
Medium: 35 mins
Well done: 50 mins
• Remove from oven and loosely cover with foil and allow to rest for 15 mins.
• Carve and serve.
