British beef fillet is seared, then hand-rolled in portobello mushroom duxelles, folded with silky-smooth chicken breast mousse and a generous helping of black truffle. It’s then encased in a crêpe and wrapped in Tom’s signature all-butter hot water crust pastry and served with a rich beef and red wine gravy. Cooking instructions

NEEDS COOKING

For Medium Cook
OVEN 45 mins
ELECTRIC 220°C / Fan 200°C / Gas 7
• Remove wellington from the fridge 45 mins prior to baking
• Preheat oven and baking tray
• Remove all packaging including foil using the greaseproof paper provided
• Place on preheated baking tray in the centre of the oven
• Bake for 45 mins turning the wellington halfway through
• Remove from the oven and rest for 45mins before slicing
• Just before serving empty the 2 sachets of gravy into a saucepan and bring to the boil, ensure it is piping hot

To Serve
• Using a sharp serrated carving knife, slice off each pastry end of the wellington, mark 6 slices 1 inch thick on the top then carve

A full oven of food may require longer cooking time.
Do not reheat.
